Banana Strawberry Streusel Brownie

The title Banana Strawberry Streusel Brownie is mouthful. However, it is justifiable as all 4 parts bring out the best in each other. It used to be the only brownie dessert on my Dessert Table menu, its plus point of having fruits in it makes it sounds juicy and healthy.

What is a Brownie?

According to Wikipedia, it is a “chocolate baked confection“. The Oxford English Dictionary describes it as “a small square of rich chocolate cake, typically containing nuts“. Then you have the debate of whether a brownie is a cake or a cookie. Followed by whether a recipe produces a fudgy, chewy or cakey brownie. There’s even a variation called Blondie, which is a brownie without chocolate!

Breakdown of Banana Strawberry Streusel Brownie Recipe

This recipe is broken down into two baking times. First, the Brownie Base, then together with the rest of the top half. Both are baked at the same temperature of 180°C and with the same duration of 20 minutes each.

Part 1 : Brownie Base

Part 2A : Mashed Banana

Choose overly riped bananas for their sweetness. You will need 6 to 8 nos or 500g peeled bananas, approximately.

Part 2B : Diced Strawberries

250g diced strawberries, approximately.

Part 2C : Streusel Recipe

The difference between Crumble vs Streusel is the proportion of sugar, butter and flour. The American Crumble has more sugar, the German Streusel is finer in texture. The technique in video is the rubbing-in method. There is an altenative technique of melting the butter and stiring into the dry mixture. Both techniques are applicable for crumble and streusel. Although it is a Streusel recipe, when dealing with customers, I call it Crumble because that is the term more widely used by the public.

Ingredients

  • 60g brown sugar
  • 60g butter (frozen)
  • 100g self-raising flour
  • 20g ground almond

Directions

  1. Measure and combine sugar, flour and almond (dry mixture).
  2. Grate frozen butter.
  3. Rub-in butter to dry mixture until sandy texture.
