How To Make A Giant Rose Cake

Baking With A Doll Mold

I am using the Wilton Wonder Doll Mold to bake a cone shaped cake for this giant rose cake.

There is a heating core in this set which helps cake batter rise but I have omitted it because my deck oven is too low to fit the stand and core. So I taped the hole at the bottom with parchment paper and baked the cake at a lower temperature of 150oC for an hour.

To ease cake release after baking, the doll mold needs to be coated with cake release spray, or use the traditional method of brushing oil all over insides and flouring it, instead of the normal parchment paper method because of its odd shape.

The cake sits on a 12 inch diameter cake board. That’s how big it is.

Adding Height With A Cupcake And Carving the Base

A cupcake is added on top and carved to make a sharp cone.

I keep stock of extra cupcakes in my freezer, handy for situations where you never know when you will need them.

The bottom of the cake is also carved. This rule is applied to all 3D cakes as it gives the appearance of not being stuck flat on the cake board.

After carving, it is proceed with layering, filling and ganaching. I use a ratio of 1:2 (whipping cream : dark chocolate) and whipped.

Working With Wafer Paper

The cake base is fondant, which needs to be the same color as the petals, in this case is pink. Add a small fondant cone on top to hold the first few

Air-brushing

Original wafer papers are white. This pastel pink shade is using air-brushing technique. Air-brushing allows for wide coverage and the result gives light pastel colours.

Cutting petal shapes, curling, curving and mist-spraying

Cut out half petal shapes for the top part of the rose. The bottom petals are freehand wave cutouts.

Frill the petals using wooden skewers.

Mist-spray the bottom half to attach the petals. Take care not to over spray. Sorry for the not-in-screen at this stage, I was trying not to get water on the cake.

Dusting with Petal Dust

Dust the petal edges with edible petal dust. The ones I use are Millusion brand from Malaysia. They are all solid colors, to lighten, mix with cornflour. Link to my Shopple storefront. Topper is optional.
