All About Cupcakes: Cupcake Decorating Class (Part 2)
Hands-on cupcake decorating class has been my most popular class since the days of being a Wilton Method Instructor in Ipoh. It is a simplified version of buttercream decorating with the objective of introducing Wilton Course 1, using cupcakes as the base. I call it Cupcake Class: Buttercream.

The first part of the class is a demonstration on How to Bake Cupcakes. For the second part, students get to decorate their own cupcakes and their masterpieces will be brought home packed in a presentable cupcake gifting packaging.
1) White Chocolate Buttercream Recipe
Introducing the best buttercream for tropical climate here in Ipoh aka hot summer weather. My recipe of 3 ingredient buttercream which is stable in tropical weather, produces sharp piped edges, and does not need refrigeration. It can also be used to crumb coat a cake by adjusting the amount of chocolate. Basically it is a white chocolate buttercream recipe.
White Chocolate Buttercream
Ingredients
- 250g creamwell
- 250g icing sugar
- 125g white chocolate (melted)
Directions
- Whisk or beat creamwell with icing sugar.
- Add in melted white chocolate and whisk to combine.
- Best leave to rest one hour. I normally let it rest overnight.
2) Mixing Colours in a Systematic Way to Save Energy and Reduce Waste
Tips:
- Prepare all the required piping bags, coupler, pipng tips, a bowl, spatula and a tall container.
- To get different shades of the same color, start with the darker shade.
- Start with the lightest color, then gradually move to darker colors. Example yellow before red, red before green.
3) How to Use Coupler and Change Piping Tips
I have a self-explanatory video of how to use a coupler for piping bag preparation. The reason to use a coupler enables the changing of piping tips. For when you want to use the same icing color but changing to a different tip for a different piping design.
